And I started trying to sell my business in the States to move here to the Caribbean. You know, and I was like, that would never happen anywhere else, and then it happened again and it happened again. Croix and the very first day someone invited me to their house for dinner. There became a point where I started doing like a lot of TV shows and a lot of tuxedo type events and things like that, which is not me, I like to wear shorts and a t-shirt.”Īs his reputation and business grew, Chef Todd said he would often take members of staff away on vacation, their favourite haunts, he intimated, could be found in the Caribbean. If I create something and someone has a good experience and they have fun and they're smiling, it's kind of instant gratification for doing a good job because I made the food, they ate the food, they love the food, they're smiling, they're happy, they leave and I go home and I'm like, yeah, that was good day… I did very well in the States. People always gather around food, people have a good time around food and for me, at the end of the day, I get to be creative. It’s a creative outlet but it's also a bit of a social thing. While he enjoyed each of these professions there came a time he could no longer deny the allure of his true passion, cooking.
